In 2005 Brocket Hall announced the appointment of Phil Thompson, Executive Chef of its flagship fine dining restaurant Auberge du Lac. Phil joined Auberge du Lac in 2002 and has provided an outstanding contribution to the success of the restaurant following engagements at leading London wedding venues including L’Escargot, the Lanesborough and St. Martins Hotels.
Phil is 100 percent hands-on, combining the best traditions of French cooking with his own essentially English background. His success with Auberge du Lac is such that his responsibilities now include Brocket Hall, where he oversees menus for their prestigious clientele.
In January 2009, Phil and the Auberge du Lac were awarded a much coveted Michelin Star.
